BLT 2 Ways

There’s the classic BLT.

And then there’s the version where you decide regular tomatoes aren’t enough.

We made both.

One sticks to tradition. Toasted bread, Duke’s mayo, crispy bacon, lettuce, fresh tomato. Hard to beat.

The other takes that same idea and turns it up. Fried green tomatoes, a quick garlic aioli, thick cut bacon, toasted sourdough. Same foundation, just louder.

If you’re a purist, the classic holds up.
If you want a little crunch and a little heat, the fried green tomato version might win.

Either way, you’re not losing.

INGREDIENTS

Fried Green Tomatoes

  • 2 heirloom green tomatoes, sliced thick
  • 1 cup flour
  • 2/3 cup cornmeal
  • 1 cup panko
  • 2 eggs
  • ½ cup buttermilk
  • 2 tablespoons Blackstone Bayou Blend seasoning
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • Avocado oil

Sandwiches

  • 1 to 2 pounds smoked bacon
  • Duke mayonnaise
  • Green leaf lettuce
  • Red tomato
  • Brioche bread
  • Sourdough bread

Aioli for Fried Green Tomato Version

  • ½ cup mayonnaise
  • ¼ cup minced garlic
  • Juice of ½ lemon
  • 4 dashes Louisiana hot sauce
  • 1 tablespoon Blackstone Bayou Blend seasoning

INSTRUCTIONS

Fried Green Tomatoes

  1. In one bowl, mix flour with 1 tablespoon Blackstone Bayou Blend seasoning, paprika, and chili powder.
  2. In a second bowl, whisk eggs and buttermilk together.
  3. In a third bowl, mix panko and cornmeal.
  4. Slice green tomatoes into thick slices.
  5. Dredge each slice in flour mixture, then egg mixture, then panko mixture.
    Set aside.
  6. Set griddle to medium high heat.
  7. Add avocado oil to create a shallow fry.
  8. Cook tomatoes on both sides until golden and crispy.
  9. Remove and set aside.

Bacon

  1. Set griddle to medium high heat.
  2. Cook bacon until crispy.
  3. Remove and set aside.

Classic BLT Assembly

  1. Heat griddle to medium high heat.
  2. Spread a thin layer of mayonnaise on both sides of each slice of brioche.
  3. Place bread on griddle in bacon fat and toast until desired crispiness.
  4. Remove from griddle and spread an additional layer of mayonnaise if desired.
  5. Slice red tomatoes and season with salt and pepper.
  6. On bottom slice of bread, layer tomato, green leaf lettuce, and 4 pieces of bacon.
  7. Top with second slice of bread.

Fried Green Tomato Bacon Sandwich Assembly

  1. In a small bowl, whisk together mayonnaise, garlic, lemon juice, hot sauce, and seasoning to make aioli.
  2. Slice sourdough bread.
  3. Spread a thin layer of mayonnaise on each side and toast on the griddle until crisp.
  4. On bottom slice, spread garlic aioli.
  5. Layer green leaf lettuce.
  6. Add 2 fried green tomato slices.
  7. Add 4 slices of bacon.
  8. Spread aioli on top slice of bread and place on top.
  9. Slice and serve immediately.
