We were staring down another game day weekend and needed something that would actually wow our friends. Sure, we could throw together some basic sliders or order pizza like everyone else, but where's the fun in that? We wanted an appetizer that would have people talking, taking pictures, and asking for the recipe before halftime was over.
That's when inspiration struck: what would happen if we took everyone's favorite childhood burger and turned it into the perfect party-sized appetizer? Not just any sliders, but Big Mac sliders with all the iconic flavors we grew up loving, complete with that special sauce that somehow tastes exactly like the original.
The result exceeded every expectation. These sliders combine the sweet, soft texture of Hawaiian rolls with an authentic Big Mac sauce that'll fool anyone in a blind taste test. They're impressive enough for your pickiest friends but approachable enough that you won't stress about making them during pregame prep.
What Makes These Sliders Game Day Gold
The magic starts with Hawaiian rolls. That slight sweetness and pillowy texture is the perfect contrast to the savory beef and tangy sauce. But here's the real secret: we use the actual packaging from the Hawaiian rolls as our patty mold. One package bottom creates perfectly sized patties that fit exactly with the bun layout. It's genius-level efficiency that means you're making all those sliders with just two large patties.
Then there's the sauce. We're not talking about some approximation or shortcut version. This Big Mac sauce tastes exactly like what you remember, with the right balance of mayonnaise, sweet pickle relish, Dijon mustard, and those key spices that make it unmistakable. Make a double batch because people will want to put this on everything.
The double-layer construction is what really makes these special. Just like the original Big Mac, these sliders have that middle bun layer that soaks up all the flavors while keeping everything structurally sound. It's the difference between a regular slider and something that feels like an actual experience.
Ingredients
For the Big Mac Sauce:
- 1 cup mayonnaise
- ¼ cup sweet pickle relish
- 2 tbsp Dijon mustard
- 1 tsp white wine vinegar
- 1¼ tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- ¼ tsp white pepper
For the Sliders:
- 2 lbs ground beef
- 12 slices American cheese
- Iceberg lettuce,shaved
- pickles,sliced
- 1 yellow onion, diced
- Sesame seeds
- 2 packs King's Hawaiian rolls
- Extra virgin olive oil
- Salt and pepper
- Butter
Instructions
Make the Big Mac Sauce
In a large mixing bowl, whisk together all sauce ingredients until smooth and well combined. Refrigerate until ready to use. This can be made a day ahead.
Prep the Sliders
- Remove Hawaiian rolls from packaging and save the bottom plastic containers - these are your patty molds.
- Slice all the rolls horizontally through the middle and set aside.
- Divide ground beef in half and press each portion into the bottom of the Hawaiian roll packaging to create two large patties that match the bun layout.
Cook the Patties
- Heat your griddle to medium heat and add a light coating of olive oil.
- Place both meat patties (still in their molds) onto the griddle, then carefully remove the plastic molds.
- Season with salt and pepper.
- Cook until edges are deeply browned and crispy with a lacy, caramelized crust forming on the bottom. You'll see juices beading on the surface and the patty will release easily when nudged with a spatula.
- Flip the patties and season the cooked side.
- Top with American cheese slices and let melt.
- Remove from griddle and keep warm.
Prepare the Buns
- Lightly toast all the Hawaiian roll pieces on the griddle until just warmed.
- Brush melted butter on the top buns and sprinkle with sesame seeds.
Assembly Time
- Sauce the bottom bun layer generously.
- Add the first beef patty layer.
- Top with shaved lettuce, pickle slices, and diced onions.
- Add the middle bun layer and sauce it.
- Add the second beef patty layer.
- Top with more lettuce, pickles, and onions.
- Crown with the sesame seed top buns.
- Using a sharp knife, carefully cut through all layers to separate into individual sliders.
